General Description: Almonds are initially soaked in food grade containers with filtered water overnight and are
fully submerged for 14-16 hours. After the overnight soaking, the soaked nuts are scooped out into strainers
(colanders), then carefully rinsed. They are then left to drain for a few minutes. Small-hole strainers are used
so no nuts slip through the process. A secondary strainer is also used in the sink itself. After rinsing, the nuts
are laid out on mesh trays with approximately 2-4kg of wet product per tray. The trays are then loaded into
dehydrators for 20 hours drying. All dried below 47 degrees Celsius.
Appearance: Medium bulbous shape, light colour, smooth surface. Firm brittle texture.
Flavour: Mild almond flavour, with subtle, sweet overtone. Not bitter, rancid or off in taste.
Odour: Typical natural almond odour, free from rancid or bad odours.
